My friend made this for supper tonight and it was good. Put me in mind of chow-chow or relish. I hadn't heard of it before.  It would be great with pintos!!
Kraut Salad
1 c. drained sauerkraut
1 c. diced celery
1/2 c. diced green & red peppers (combined, for color)
1/2 c. chopped onions
1 1/4 c. sugar (or less)
1/4 c. cooking oil
1/4 c. vinegar
1/4 tsp. salt
*Mix all together, cover, and put in fridge for 5 hours or overnight
My friend thought 1 1/4 cup of sugar was too much so she used 3/4 cup. She also diced up a little red onion and added for color.
